I found this fabulous raw group on meetup.com, who meet every few weeks or so to enjoy delicious food together and make new friends.
Today I went for the second time, both times all the food was absolutely mouth wateringly delicious (I keep forgetting to take pictures!)
I commented on the main page asking everyone to please bring their recipes and of course I forgot to bring mine :b so here it is. It turned out really well. I'll call it Cheesy Alfredo.
It was kind of a variation on this and a couple other recipes.
Raw Cheesy Alfredo (with Zucchini Linguine)
serves 6-8
Sauce
<>2 cup raw macadamia nuts soaked overnight
<>1 cup raw cashews soaked overnight
<>juice from 1 lemon (add more or less depending on how zesty you want it)
<>2 tblsp fresh thyme leaves
<>2 tblsp fresh oregano leaves
<>4 gloves garlic (I like it really garlicky)
<>1/3 cup of water
<>1/4 cup olive oil
<>salt and pepper to taste
add ingredients to food processor and blend till creamy
*it ended up pretty thick, you can add more water or oil or the coconut milk if you want to thin it out a little more
Noodles
<>8 medium zucchini
Wash and peel zucchini. Using a vegetable peeler, create thin, noodle-like pieces, running the peeler down the length of the zucchini until you reach the seeded core part (which you can discard or better yet, save for something else).
Garnish
I sprinkled the top with
<>chopped basil leaves and
<>raw hemp seeds
*I didn't take any pictures, but this is pretty close to what it looked like before I added the basil and hemp seeds on top.
